Latin
Marinated and Grilled Vegetables
Ingredients:
· Butternut squash, peeled (or squash of choice) and sliced
· Zucchini, sliced ¼ inch thick lengthwise
· Mushrooms, stem removed
· Onions (red or yellow), cut into ½ inch rings
· Peppers of choice, quartered; seeds and ribs removed
Marinade
· 2-3 Tablespoons LATIN AMERICA BLEND
· 2 Tablespoon olive oil
· 2 Tablespoons agave Nectar (optional)
· Salt and pepper
Mix
the marinade well and add the prepared vegetables.
Marinate vegetables for up to an hour.
Grill, and serve with you favorite accompaniments.

Marinated Prawns
Yield 1 pound
Ingredients:
· 1 lb. prawns, peeled and de-veined
· Lemon zest, from one lemon, finely chopped (optional)
· Cilantro, roughly chopped (optional)
Marinade
· 2-3 Tablespoons LATIN AMERICA BLEND
· 2 Tablespoons olive oil
· Salt and pepper
Mix
the marinade well and add the prepared prawns, cilantro and lemon zest.
Marinate prawns for up to an hour.
Grill, broil, or sauté, and serve with you favorite accompaniments.
Note: If grilling prawns on wooden skewers make sure to soak wooden
skewers in water beforehand (approximately 20 minutes) and skewer the
prawns so they are in same direction.

Marinated Steak
Yields 2 10-12oz servings
Ingredients:
· 2 - 10 oz New York Steaks, or cut of choice
Marinade
· 2-3 Tablespoons LATIN AMERICA BLEND
· 2 Tablespoon olive oil
· Salt and pepper
Mix
the marinade well and rub into the steaks.
Marinate meat for up to six hours.
Grill, broil, or dice into cubes and sauté.
Serve with you favorite accompaniments.

Yields 2-8 oz servings

· 2 - 8 oz fish portions of choice (filet or steak cut)
Marinade
· 2-3 Tablespoons LATIN AMERICA BLEND
· 1 Tablespoon Olive oil
· zest of one lemon
· Salt and pepper
Mix
the marinade well and rub into the fish.
Marinate fish for up to a day.
Grill, broil, or dice into cubes and sauté.

Marinated Game Hen
Yields 4, 7-8 oz servings
Ingredients:
· 2 Game hens, cut in half (back bone removed)
Marinade
· 2-3 Tablespoons LATIN AMERICA BLEND
· 2 Tablespoons olive oil
· Salt and pepper
Cut
hens in half and remove the backbone.
Mix the marinade well and rub onto the hen halves.
Marinate hens for up to a day.
Bake or grill hens and serve with you favorite accompaniments.

Ingredients:
· 16 oz tofu, firm and organic, sliced into ¼ inch slabs
For
marinade:
· 2-3 Tablespoons LATIN AMERICA BLEND
· 1 Tablespoon Olive oil
· ¼ cup orange juice or agave nectar
· ¼ cup soy sauce
· Salt and pepper
Mix
the marinade well and rub onto the tofu slices.
Marinate tofu for up to a day.
